A modern winery with more than 100 years of history

Although the history of NOC wineries is very recent, it dates back a long way.

 

It all started more than a century ago, in 1918, when Vinícola Morales was created in Manzaneque, Toledo. For almost 100 years, the wine production of the winery was destined almost exclusively for local consumption.

 

Carlos Galdón, the new owner, promoted a radical transformation, incorporating the innovations that have been introduced in the wine world in the last 20 years. The challenge that was set was to make the highest quality wines of Spain in Toledo.

 

This required a new foundation of the Winery.

Although the history of NOC wineries is very recent, it dates back a long way.

 

It all started more than a century ago, in 1918, when Vinícola Morales was created in Manzaneque, Toledo. For almost 100 years, the wine production of the winery was destined almost exclusively for local consumption.

 

Carlos Galdón, the new owner, promoted a radical transformation, incorporating the innovations that have been introduced in the wine world in the last 20 years. The challenge that was set was to make the highest quality wines of Spain in Toledo.

 

This required a new foundation of the Winery.

Since then the winery has expanded, now having more open and comfortable spaces to work in, as well as having improved our technical conditions. New vats have been incorporated with deposits of small capacity, made of stainless steel, cement and wood, to make each wine in a personalised way. The entire stock of barrels has been renewed, maintaining a high percentage of new French oak barrels, which are only used for up to 4 years.

 

BODEGAS NOC wines are all elaborated with grapes that come from our own vineyards, which are located in Los Montes de Toledo.

 

In order to improve the management of the vineyards, Julián Palacios, a benchmark in Spain, has been hired as “Vineyard Caretaker”. The management of the current vineyards was improved and the planting of new plots of land with improved varieties and some with experimental varieties began. At Bodegas NOC we know that excellence can only be achieved by controlling the entire process, from the vineyard to the bottle. Ignacio de Miguel, who has been a consultant oenologist for many years, was appointed General Director of the Winery, leading a young but experienced team that is willing to position Bodegas NOC among the best in Spain.

 

The improvement in the processes and in the venues, with the development of new facilities, has helped turn the new wines into extraordinary wines. Unique wines, among which we can highlight the first Brut that has been created from Los Montes de Toledo, as well as being the first in the world to be made with a Tempranillo (Champenoise method).

The Winery has become a destination of wine tourism: in addition to a production centre of excellence, it is now also a visitor centre, with stores, tasting rooms and spaces for all kinds of events, with capacity for more than a thousand people.

 

BODEGAS NOC has just been born and is already one of the most exclusive wineries in Spain.

The Montes de Toledo

A privileged location that is an ideal place to produce large wines due to its large fluctuations in temperature between seasons, slightly acidic clay soil and altitude.

All of the Bodegas NOC wines are made in Los Montes de Toledo with grapes from our own vineyards.

 

The area has a wide variety of native fauna such as roe deer, wild boar and deer. The rosemary, rockrose and holm oaks of this area also provide the vineyard with the characteristic aromas of this land. The soil is another of the elements that influence our wines, as it nourishes our vineyards. Being composed of gravel and clay, it retains the moisture that the plants need to develop.

 

Although the wines from Toledo have traditionally been made in bulk, Bodegas NOC has made the most of this earthly paradise to extract the fruit that grows in this area and that allows us to create our extraordinary wines. Wines with the Toledo spirit that bring us back, in each sip, to the field where they were born and to the ENERGY IN THE EARTH.

The winery has 43 hectares of
vineyards in the heart of the
Montes de Toledo.

The winery has its own 43 hectares of vineyards that are located in the heart of the Montes de Toledo. 33 hectares in Los Yébenes, 25 km from the winery, and 10 hectares in Manzaneque, 3 km from the winery. These are the locations where we grow the different grape varieties that we elaborate our wines with.

The vineyard has red varieties, such as Tempranillo, Syrah, Petit Verdot, Graciano, Garnacha,Cabernet Sauvignon and Zinfandel experimental as well as white varieties, such as Chardonnay and Viognier.

Oenologists

At BODEGAS NOC we have a team of renowned oenologists, who contribute all their experience and know-how in the elaboration of each one of our wines.

Products

Our vineyards provide grapes that we use to produce red wine, white wine, rosé wine and Brut.

In addition, we produce two exceptional gourmet products:
Extra virgin olive oil, of the Picual variety, that is produced immediately after harvesting the olives and is processed at a low temperature, in our oil mill located near the olive grove. Rosemary and multi-flowers honey of an exceptional quality, is produced from our 400 hives that are located at the Finca de los Yébenes, where the vineyard is located.
